Sticky Chai Puddings
  • 1 cup pitted prunes, chopped
  • 1 tsp bicarbonate of soda
  • 1 tbsp sticky masala chai
  • 1 cup just-boiled water
  • 1½ cups cake, sponge & steamed bun self-raising flour
  • 1 cup of firmly packed brown sugar
  • 80g butter, melted, plus extra for greasing
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Good quality vanilla bean ice cream, to serve

  • 80g butter
  • 150ml (⅔ cup) cream
  • 165g (firmly packed ¾ cup) brown sugar
  • ½ tsp ground cinnamon
  • ¼ tsp ground cardamom
  • ¼ tsp ground ginger
  • Pinch ground clove
  • Pinch nutmeg
  • Pinch salt
