Ingredients
  • 2 tbsp low-sodium chicken broth, plus 2 cups
  • ½ cup white onion, diced
  • 1 medium clove garlic, peeled and minced
  • 1 medium carrot, peeled and chopped
  • 1 medium celery stalk, chopped
  • 3 cups Roma tomatoes, coarsely chopped
  • ¼ cup tomato paste
  • ⅓ cup fresh basil leaves
  • ½ tsp raw apple cider vinegar
  • 1 ½ cups unsweetened almond milk or coconut milk
  • 2 bay leaves
  • sea salt, to taste
  • freshly ground black pepper, to taste
