Ingredients
- 2 pounds boneless pork stew meat
- 1 (20-ounce) Pineapple chunks in juice
- 1 red bell pepper; seeded and chopped
- 3 garlic cloves; minced 1 tbsp. grated ginger
- 3 tbsp. honey
- 2 tbsp. brown sugar
- 2 tbsp. soy sauce
- 2 tbsp. water
- 1 tbsp. cornstarch
- 2 tbsp. olive oil; divided
- 1 onion; chopped
- 1 tsp. dried oregano
- Salt and freshly ground black pepper; to taste
Steps
- Drain the pineapple chunks, reserving the juice in а bowl.
- For the sauce: in the bowl of pineapple juice, add garlic, ginger, honey, brown sugar, soy sauce, water and cornstarch and beat until well combined.
- Place 1 tbsp. of oil in the Instant Pot and select *Sauté*. Then add the bell pepper and onion and cook for about 3 minutes.
- Transfer the onion mixture into а bowl. Place the remaining oil in the Instant Pot and select *Sauté*.
- Then add the pork meat and cook for about 4-5 minutes.
- Add pineapple chunks, oregano, salt and black pepper and stir to combine. Select the *Cancel* and stir in the sauce.
- Secure the lid and place the pressure valve to *Seal Position*. Select *Manual* and cook under *High Pressure* for about 10 minutes.
- Select the *Cancel* and carefully do а *Natural Release* for about 5 minutes and then do а *Quick Release*.
- Remove the lid and stir in the cooked onion mixture. Serve hot.
