Spicy Mushroom and Walnut Bolognese [Vegan]

  • 15.8 ounces Cremini mushrooms, half sliced and half cut into fine strips
  • 1 cup walnuts, finely chopped
  • 2 plum tomatoes, roughly chopped
  • 2 13.5-ounce cans peeled, chopped tomatoes
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon organic tomato paste
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika powder
  • ΒΌ teaspoon ( or more ) dried chili flakes
  • Sea salt and black pepper, to taste
