Gluten-Free Raspberry Thumbprint Cookies
Ingredients
  • 1 cup sugar
  • 1 tbsp lemon zest from 1 lemon
  • 1 cup dairy free butter melted and cooled
  • 2 tsp pure lemon extract
  • 4 tbsp lemon juice from 1 lemon
  • 2 ½ cups gluten-free flour blend I used Bob's Red Mill 1:1 Gluten-Free Flour blend
  • 2 tsp xanthan gum if your blend doesn’t already contain it
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ cup raspberry jam
