White Chicken Chili
Ingredients
  • Cooking Oil
  • 2 lb shredded Rotisserie Chicken
  • 1 Chopped Onion
  • 5 cups Chicken Broth
  • 3 15 oz rinsed and drained cans Cannellini (White Kidney) Beans
  • 1 15 oz rinsed and drain can Corn
  • 1 12 oz jar of Hatch Green Chiles
  • Chili Powder
  • Shredded Cheese
  • Minced Garlic
  • Salt to Taste
  • Pepper to Taste
Steps
  1. Heat cooking oil in a pot over medium heat. Saute the chicken with salt, pepper, chilli powder, onion, and garlic. Add the chicken broth and bring to a boil. Add the beans, corn, and green chiles. Bring the mixture down to a simmer and cook for about 45 minutes.
  2. Serve chili and top with shredded cheese.
