Keto - Cauliflower Mashed "Potatoes"
Mock mashed potatoes using riced cauliflower. Top with chopped chives, or for a loaded mashed “potato,” top with crumbled bacon and grated cheddar cheese.

Ingredients
  • 1 large head cauliflower or 1 bag riced cauliflower (32 ounces)
  • ½ cup sour cream (or cream cheese, or mix of both)
  • 3 tablespoons heavy whipping cream
  • 3 tablespoons butter
  • 4 tablespoons Parmesan cheese
  • ½ to 1 teaspoon garlic powder (start with ½ tsp)
  • Salt and pepper to taste
Steps
  1. Pre-rice cauliflower using a food processor.
  2. Put the cauliflower into the microwave with a paper towel covering the top, then microwave for 5 minutes, or steam/sauté on stove top.
  3. Mix all of the other ingredients into it, then use an immersion blender to pulse the cauliflower and other ingredients together.  Thin with a pour of chicken broth if needed.
