Syndy's Corn and bacon casserole Recipe

Ingredients
- 1 package of bacon, diced
- 1 small sweet onion, diced
- 4 fresh garlic cloves, minced Salt and pepper to taste
- 1 Tablespoon of flour
- 1 pint of sour cream
- 2 bags of frozen corn (white corn is the preferred one for a more tender kernel.)
Steps
- In a large pan fry bacon, remove and reserve.
- In same pan start cooking the onion and the garlic, lightly season with salt and pepper, when onion starts to reach a golden or translucent stage.
- Add the flour to slightly coat the onions and garlic (the flour will act as a thickener).
- Stir the sour cream into the onions and garlic, wait a few minutes, and then add the corn to the mixture, continue cooking the mixture. Lightly season with salt and pepper again.
- Stir half of the reserved bacon into the mixture continue cooking for a few minutes.
- Transfer to a lightly greased casserole dish, top with the remaining bacon, and place into a 350°F oven and bake for 15 to 20 minutes or until bubbling hot.
Notes
- Could add a couple of cups of shredded cheese with the bacon used to top the casserole
