Syndy's Corn and bacon casserole Recipe
Ingredients
  • 1 package of bacon, diced
  • 1 small sweet onion, diced
  • 4 fresh garlic cloves, minced Salt and pepper to taste
  • 1 Tablespoon of flour
  • 1 pint of sour cream
  • 2 bags of frozen corn (white corn is the preferred one for a more tender kernel.)
Steps
  1. In a large pan fry bacon, remove and reserve.
  2. In same pan start cooking the onion and the garlic, lightly season with salt and pepper, when onion starts to reach a golden or translucent stage.
  3. Add the flour to slightly coat the onions and garlic (the flour will act as a thickener).
  4. Stir the sour cream into the onions and garlic, wait a few minutes, and then add the corn to the mixture, continue cooking the mixture. Lightly season with salt and pepper again.
  5. Stir half of the reserved bacon into the mixture continue cooking for a few minutes.
  6. Transfer to a lightly greased casserole dish, top with the remaining bacon, and place into a 350°F oven and bake for 15 to 20 minutes or until bubbling hot.
Notes
  • Could add a couple of cups of shredded cheese with the bacon used to top the casserole
