Sweet Potato Salad with Cumin, Smoked Paprika, and Almonds
Ingredients
  • 3 pounds sweet potatoes, peeled and cut into ¾-inch pieces
  • 3 tablespoons plus ¼ cup extra-virgin olive oil, divided
  • 2 teaspoons table salt
  • 3 scallions, sliced thin
  • 3 tablespoons lime juice (2 limes)
  • 1 jalapeño chile, stemmed, seeded, and minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon pepper
  • 1 garlic clove, minced
  • ½ teaspoon ground allspice
  • ½ cup fresh cilantro leaves and stems, chopped coarse
  • ½ cup whole almonds, toasted and chopped
