SMALL Artisan Sourdough with All Purpose Flour
Ingredients
  • 50 g (¼ cup) bubbly, active starter
  • 165 g (½ cup + 3 tbsp) water
  • 5 g (1 tsp) fine sea salt
  • 250 g (2 cups + 1 tbsp) all purpose flour (Trader Joe or King Arthur)
  • Follow the instructions below. Bake for 20 minutes with the lid on and 40 minutes with the lid off. Makes (1x) standard size loaf. Note: I use 50 g of starter for both the small AND standard size loaf. Using a smaller amount of starter with an long, overnight rise will help to prevent over proofed dough in the morning.
