  • 1 medium cucumber, preferably seedless, peeled and cut into ½-inch cubes
  • 2 tablespoons finely chopped red onion or shallot
  • 1 tablespoon sherry vinegar
  • 3 tablespoons extra-virgin olive oil
  • Coarse sea salt
