Summer Rolls with Tofu
Ingredients

  • 10 to 12 sheets of rice paper
  • Large, wide bowl of warm water

  • Crunchy veggies (I used bell pepper, carrot, and cucumber)
  • 1 small block of Braised Tofu
  • 1 cup cooked vermicelli noodles
  • Fresh herbs, such as mint and thai basil
  • Salad greens or shredded lettuce
  •  
  • subheading: Sauce:
  • ½ cup cashew or wow butter
  • 2 tbsp soy sauce
  • ½ tbsp ginger
  • 2 cloves garlic
  • ½ tbsp sugar
  • 2 tbsp rice vinegar (can also sub lime juice)
  • 2 to 4 tbsp water
