Tangy Tex Mex Ground Beef and Brussels Sprouts
Ingredients
  • 10 oz Shaved Brussels Sprouts*
  • 1 Tablespoon Olive Oil
  • 1 pound Ground Beef (96/4)
  • ½ Tablespoon Beef Fajita Seasoning (or a pinch of salt, pepper, garlic and onion powder, and cayenne)
  • ¼ cup Water
  • subheading: For the Lime Vinaigrette:
  • ¼ cup Lime Juice (about 2 limes)
  • 2 Tablespoons Honey
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Pickled Peppers (I used diced jalapeño)
  • 1 clove Garlic, crushed
  • subheading: For the Spicy Crema:
  • ⅓ cup (80g) Fat Free Greek Yogurt
  • 2 Tablespoons (26g) Light Mayo
  • 1 Tablespoon Lime Juice
  • 1 Tablespoon Sriracha or Hot Sauce
  • ½ teaspoon Chili Powder
