Ingredients
  • 3 Tbsp all-purpose flour
  • salt, to taste

  • 4 chicken cutlets ( about 1¼ lbs)
  • 2 Tbsp extra-virgin olive oil
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • ⅓ cup sun-dried tomatoes packed in oil, drained and finely chopped
  • 2 tsp tomato paste
  • ½ tsp dried oregano
  • ¼ tsp crushed red pepper flakes
  • ¼ tsp sugar
  • 2 Tbsp grated Parmigiano Reggiano or Pecorino Romano cheese
  • 2 Tbsp fresh chopped basil, plus more for serving
