Char's Spinach Lasagna Rosettes
These are east to make up and freeze on a sheet without the sauce, then put into a bag and take out what you need when you are having company.  Submitted by: Char Timothy.

Ingredients
  • 12 Lasagna Noodles
  • 1 Tbls Honey
  • 10 Oz Spinach, Frozen
  • 1 Lb Tofu, Med
  • 3 Tsp Garlic, Minced
  • Salt to Taste
  • 1 Tbls Water
  • 2 Tsp Basil
  • 1 Tbls Lemon
  • 1 Tsp Oregano
Steps
  1. Cook the noodles as directed on package.
  2. Thaw and drain the spinach well.
  3. Mash the Tofu in a bowl and add the remaining ingredients including the spinach.
  4. Lay a noodle on the counter, spread wit hthe tofu mixture and roll up.
  5. Place in a pan seam side down.
  6. Repeat with remaining noodles.
  7. Cover with your favorite sauce and bake until bubbly.
Notes
  • You can use fresh spinach and lay it on top of the Tofu mixture after you have spread it on the noodle.
  • You can use a Red Sauce or a Alfredo Sauce or a combination.
