Ginger-Garlic Turkey Bowl with Brussels Sprouts Chips
Ingredients

  • 2 Tbsp. extra virgin olive oil, divided
  • 1 pound ground turkey, preferably dark meat
  • 1 Tbsp. minced garlic (about 4 cloves)
  • 1 ½ Tbsp. minced ginger
  • Kosher salt
  • ¼ cup chicken stock
  • ½ cup coconut aminos
  • 2 to 3 Tbsp. sriracha, plus more to taste
  • 2 Tbsp. rice wine vinegar
  • 1 cup shredded purple cabbage
  • 2 scallions, fine chopped
  • Fresh squeezed lime juice/lime wedges for garnish
  • Jasmine rice or cauliflower rice for serving
