Spiced Cranberry Sauce

Ingredients
- 8 ounces of fresh Organic Cranberries, rinsed and drained
- ½ cup Water
- ½ cup Honey
- 1 tablespoon Light Brown Sugar
- 3 1.5" Cinnamon Sticks
- 5 Cardamom Pods
- ¼ teaspoon freshly ground Nutmeg
- ⅛ teaspoon ground Cloves
- 6 Dried Orange Slices
- 2 tablespoons Crystallized Ginger finely chopped
- 1 tablespoon Grand Marnier, optional
Steps
- Bring the cranberries, honey, brown sugar, cinnamon stick, cardamom pods, nutmeg, cloves, orange slices, ginger and water to a simmer in a medium saucepan.
- Cover the mixture and allow it to simmer on medium-low heat for 7 to 10 minutes, or until the cranberries are just beginning to burst.
- Add the Grand Marnier and stir to combine.
- Simmer uncovered for an additional 1 to 2 minutes. (do not overcook as the cranberries will burst).
- Remove the dried orange slices, cardamom pods and cinnamon sticks.
- Transfer the sauce to a shallow bowl and let it cool completely.
Notes
- May be made several days before. Serve at room temperature.
