Spiced Cranberry Sauce

Ingredients
  • 8 ounces of fresh Organic Cranberries, rinsed and drained
  • ½ cup Water
  • ½ cup Honey
  • 1 tablespoon Light Brown Sugar
  • 3 1.5" Cinnamon Sticks
  • 5 Cardamom Pods
  • ¼ teaspoon freshly ground Nutmeg
  • ⅛ teaspoon ground Cloves
  • 6 Dried Orange Slices
  • 2 tablespoons Crystallized Ginger finely chopped
  • 1 tablespoon Grand Marnier, optional
Steps
  1. Bring the cranberries, honey, brown sugar, cinnamon stick, cardamom pods, nutmeg, cloves, orange slices, ginger and water to a simmer in a medium saucepan.
  2. Cover the mixture and allow it to simmer on medium-low heat for 7 to 10 minutes, or until the cranberries are just beginning to burst.
  3. Add the Grand Marnier and stir to combine.
  4. Simmer uncovered for an additional 1 to 2 minutes. (do not overcook as the cranberries will burst).
  5. Remove the dried orange slices, cardamom pods and cinnamon sticks.
  6. Transfer the sauce to a shallow bowl and let it cool completely.
Notes
  • May be made several days before.  Serve at room temperature.
