Farfalle with Mushrooms

Ingredients
  • 10 to 12 oz farfalle
  • 2 Tb olive oil
  • 3 garlic cloves, minced
  • 10 to 12 oz cremini mushrooms, cleaned and sliced
  • ½ cup grated Parmesan (or vegan parm)
Steps
  1. Cook pasta according to package directions; drain.
  2. Meanwhile, heat oil in a skillet. Add garlic and saute just until it begins to turn golden, about 1 minute. Add mushrooms, cover, and cook, stirring occasionally, until they are tender and have released some liquid, about 10 minutes.
  3. Combine pasta with mushrooms in a serving container. Add Parm and toss together. Season with salt and pepper.
