Piña Colada Cake with Rum Pineapple Frosting

subheading: RUM PINEAPPLE FROSTING:

1 cup unsalted butter, at room temperature

3 cups powdered sugar

1 tablespoon heavy cream or milk

1 tablespoon dark rum

1 teaspoon vanilla extract or vanilla paste

Pinch kosher salt

1 slice canned or fresh pineapple, cut into a rough dice
