Maryland Crab Cakes for Two

  • 7 square or 8 round saltines
  • 2 scallions, minced
  • 1 tablespoon unsalted butter, melted, plus 1 teaspoon softened
  • 1 large egg yolk
  • 1 tablespoon mayonnaise
  • 2 teaspoons Dijon mustard
  • 1 teaspoon hot sauce
  • ½ teaspoon Old Bay seasoning
  • Lemon wedges

  • Fresh crabmeat may be hard to come by, but its flavor is superior to that of pasteurized. If your crabmeat smells clean and fresh when you open the package, skip the soaking process in step 1. These crab cakes make for a nice entrée when served with a salad.
