Roasted Tomato Soup Mary Berg

  • 4 cloves garlic, unpeeled and left whole
  • ½ onion, peeled and roughly chopped
  • 5 to 7 sprigs thyme
  • 2 teaspoons sugar
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 2 to 3 cups Easy Freezer and Fridge Stock
  • Kosher salt
  • Freshly ground black pepper
  • Freshly squeezed lemon juice or a bit more balsamic, if needed
  • subheading: Crispy cheesy toast:
  • 2 slices bread
  • 2 to 3 tablespoons butter, room temperature
  • ¼ to ½ cup grated cheese
