Fluffy Vegan Banana Oatmeal Blender Pancakes
Ingredients
  • 1 ¼ cups oat flour , gluten-free if needed
  • ¼ cup almond flour , finely ground is best
  • 2 tablespoons potato starch
  • 1 tablespoon baking powder
  • ¼ teaspoon sea salt
  • ½ cup mashed ripe banana , the riper it is the sweeter these will be (see note)
  • ½ cup cashew/almond milk , or dairy free milk of choice
  • ¼ cup maple syrup
  • 1 tablespoon apple cider vinegar
