Red Wine Braised Short Ribs
Ingredients
  • 750ml bottle of dry red wine (one good enough that you’d like to drink it, since you’ll be concentrating its flavors)
  • 4 lbs short ribs cut into 2 inch chunks by the butcher
  • 5 sprigs of fresh thyme
  • 2 bay leaves
  • 3 cups beef broth plus ¼ cup, separated
  • 2 carrots, peeled and diced
  • 3 stalks of celery, diced
  • 1 large onion, diced
  • 6 cloves garlic, peeled and smashed
  • 2 to 3 tablespoons avocado oil
  • 1 tablespoon tomato paste
  • Kosher salt
