Instant Pot Barley Pilaf
A tasty version of rice pilaf, using heart healthy barley as a substitute

Ingredients
  • 2 cups of low sodium chicken broth
  • 1 cup of barley (not the instant kind)
  • 1 medium onion
  • 3 small cloves of garlic
  • 1 tbsp butter
  • salt and pepper to taste
Steps
  1. In your instant pot add butter, onion chopped, and 3 cloves of garlic
  2. Set on saute until the onion is translucent
  3. add the chicken broth, deglaze your pot (scrape the little bits of onion and etc. off the bottom of your pot)
  4. remove garlic cloves
  5. add 1 cup of barley
  6. salt and pepper
  7. put on lid, set to sealing
  8. set pot to high pressure (depending on pot this might be either pressure cook or the manual button) and 20 minutes
  9. after time is up, quick release steam
Notes
  • You can easily add other veggies of choice
