Cuban-Style Orange-Scented Black Beans

  • 1 bay leaf
  • 2 teaspoon kosher salt
  • 2 teaspoon ground cumin
  • 8 cup vegetable broth or water
  • ¼ cup extra-virgin olive oil
  • 3 bell peppers, finely chopped
  • 3 garlic cloves, chopped
  • 1 jalapeno chile, stemmed and chopped
  • ½ teaspoon kosher salt, plus more to taste
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoon tomato paste
  • 1 tablespoon orange zest
  • ¼ cup fresh orange juice
  • 1 tablespoon apple cider vinegar
