Healthy Avocado Potato Salad
Ingredients
  • 2 lb Yukon Gold Potatoes
  • 3 avocados
  • 2 to 3 scallions - chopped
  • 1 chili pepper -chopped
  • 1 lemon or lime - juiced
  • 1 cup frozen green peas (thawed out in warm water)
  • ¼ cup chives - chopped
  • ¼ cup fresh dill (roughly choppep)
  • 1 pinch sea salt + more to taste
  • 1 pinch red pepper flakes -for garnish
  • 1 lime -sliced for serving
