Clinkers Chocolate Brownie Ice-Cream Cake

I have always loved cooking, and now that I am no longer working I have time to find and experiment with new recipes. The addition of a Thermomix to my kitchen has also helped in this process, as well as making life much easier!

150 g dark chocolate melts

150 g butter chopped

3 eggs

¾ cup brown sugar firmly packed

¾ cup caster sugar

1 ¼ cups plain flour

⅔ cup cocoa powder

1 tsp baking powder

1 tsp salt

300 g Clinkers set aside 50g for decoration

1.25 litres vanilla ice-cream

250 ml thickened cream

300 g dark chocolate melts
