Espresso-Hazelnut Truffle Cookies
Ingredients

  • ⅓ c. (5 ⅓ tbsp.) unsalted butter, at room temperature

  • 2 tbsp. unsweetened cocoa powder
  • ¼ tsp. baking powder
  • ¼ tsp. salt
  • 1 c. sugar
  • 3 eggs
  • ¼ c. finely chopped hazelnuts

  • ⅓ c. semisweet mini chocolate chips
  • 1 tbsp. vegetable oil
  • ¼ c. finely chopped hazelnuts

  • This recipe must be prepared in advance. Francke prefers to include 1 ½ teaspoons brewed coffee to the dough when the chocolate mixture is added.
