- 370g ground almonds
- 210g caster sugar plus 40g for meringue
- 2 oranges, finely zested
- 160g dried apricots, diced
- 115g aquafaba
- Couple of pinches of cream of tartar
- Pinch of salt
- Icing sugar for dusting
- Method
- Rub orange zest into first measure of sugar to release the oils into the sugar.
- Add almond meal and apricots and mix to combine. Set aside.
- Add a pinch of salt and a couple of pinches of cream of tartar to the aquafaba. Whisk until it forms soft peaks. Whisk in the second measure of sugar.
- Gently fold the egg whites into the dry ingredients until just combined.
- Portion the mixture into 70g balls and roll into 10cm logs.
- Bake at 170C fanbake for 20 to 25 minutes.
- Roll in icing sugar.
