Korean Braised Chicken (Jjimdak)
Ingredients

  • 800g-1kg chicken pieces (whole chicken chopped, or thighs)
  • 2 medium Dutch cream potatoes, cut into chunks (soaked for 15 mins)
  • 1 medium carrot, cut into chunks)
  • 1 medium onion, cut into quarters and halves
  • 5 dried chillies, cut into halves and remove seeds
  • 5 button/shiitake mushrooms, quartered
  • 160g glass noodles, soaked for 30 mins
  • 2 spring onion stalks, cut into 5cm length

  • 75ml light soy sauce
  • 2 tbsp dark soy sauce
  • 2 tbsp mirin
  • 1 tbsp rice syrup or honey
  • 1 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 1 tbsp garlic, minced
  • 1 tbsp ginger, minced
  • 300ml water
  • subheading: Garnish:
  • 1 tsp toasted sesame seeds
  • 1 spring onion stalk, chopped
