Grandma's Fatoush (Palestinian Bread Salad)
Ingredients
  • Small crisp lettuce (cos/iceberg)
  • 3 to 4 firm tomatoes
  • 1 cucumber
  • Spring onions
  • Bunch of parsley (finely chopped)
  • 2 tbsp chopped mint
  • Olive oil
  • Salt and black pepper
  • Juice of 2 lemons
  • 1 pitta bread
  • Optional: 3 tbsp chopped coriander/2 cloves crushed garlic/pomegranate seeds
  • Handy Hint
  • Chop parsley, mint & coriander in a food processor for a good fine finish.
