Peanut Brittle (Buttery)

Ingredients
  • 1 cup sugar
  • ½ cup light corn syrup
  • ¼ cup water
  • ½ cup (1 cube) butter, cut into chunks
  • 1½ cup Planter's lightly salted peanuts
  • 1 tsp baking soda
  • 1½ tsp vanilla
Steps
  1. Generously butter a large rimmed baking sheet. Set aside. (I sprayed the pan with non-stick spray and wiped off extra.)
  2. Combine sugar, corn syrup, and water in a 2-qt glass bowl. Microwave on high heat for 5 minutes.
  3. Add butter. Microwave 3 minutes. Stir well.
  4. Add peanuts. Microwave 3 minutes. Stir well.
  5. Microwave 3 minutes. Stir.
  6. (If needed, microwave 1 to 3 minutes more until the sugar mixture is browned...I did not need to do this step)
  7. Stir in vanilla and baking soda. Mix just until the soda is incorporated. Try not to overmix.
  8. Pour evenly into the prepared pan. Do not spread. (I spread it to thin it out a little.)
  9. Cool completely then break into pieces.
Notes
  • Times listed are for a 1000w microwave.
  • My times were 5/3/3/2.5, which seemed to work well.
