Ingredients
  • 1 ½ cups (210 g) all purpose gluten free flour (I used Better Batter)
  • ¾ teaspoon xanthan gum (omit if your blend already contains it)
  • ½ cup plus 2 tablespoons (72 g) confectioner’s sugar
  • ¼ teaspoon kosher salt
  • 8 tablespoons (112 g) unsalted butter, at room temperature
  • 3 egg yolks (75 g), at room temperature
  • 1 teaspoon pure vanilla extract

  • 1 egg white, for brushing
  • Coarse sugar crystals, for sprinkling
