Stuffed Buffalo Chicken

Ingredients
  • 4 boneless skinless chicken breasts
  • 4oz. light cream cheese
  • ½ cup fat free mozzarella cheese
  • 1 packet ranch dressing mix
  • Buffalo wing sauce
  • Parsley
  • Ranch or Bleu cheese dressing for drizzle
Steps
  1. Preheat oven to 375. Spray 9x13 dish with cooking spray. Cut a pocket in each breast, careful not to slice all the way through.
  2. In a small bowl, mix softened cream cheese, ranch seasoning mix, and mozzarella cheese. Stuff cream cheese mixture in pocket of each breast. Generously brush buffalo wing sauce over top of chicken. Bake in oven for 30 minutes brushing with additional sauce every 10 minutes. Remove from oven and drizzle with ranch or Bleu cheese dressing. Sprinkle with parsley before serving.
