Poached Eggs with Avocado, Canadian Bacon and Tomato

Ingredients
- 1 plum tomato, cleaned and thinly sliced
- ¼ of a ripe/soft avocado, peeled and thinly sliced
- 2 medium eggs
- 2 slices (about 1 ounce) Canadian style low-sodium nitrate free bacon
Steps
- Arrange the sliced tomato and avocado in the center of a medium sized plate.
- Then brown the Canadian bacon in a skillet until cooked to desired degree of doneness.
- Poach* the eggs in slightly salted water.
- Place the bacon slices on top of the avocado and tomato and then top with the 2 poached eggs.
- Season as desired with a pinch of salt and pepper.
- *Variation: If desired, eggs may be scrambled or 'fried' in a skillet with non-stick cooking spray.
