Poached Eggs with Avocado, Canadian Bacon and Tomato
1 red, 1 blue, .5 green

Ingredients
  • 1 plum tomato, cleaned and thinly sliced
  • ¼ of a ripe/soft avocado, peeled and thinly sliced
  • 2 medium eggs
  • 2 slices (about 1 ounce) Canadian style low-sodium nitrate free bacon
Steps
  1. Arrange the sliced tomato and avocado in the center of a medium sized plate.
  2. Then brown the Canadian bacon in a skillet until cooked to desired degree of doneness.
  3. Poach* the eggs in slightly salted water.
  4. Place the bacon slices on top of the avocado and tomato and then top with the 2 poached eggs.
  5. Season as desired with a pinch of salt and pepper.
  6. *Variation: If desired, eggs may be scrambled or 'fried' in a skillet with non-stick cooking spray.
