Chickpeas Cacio E Pepe

  • 300g (1 ½ cups) dried chickpeas
  • soaked overnight in plenty of water and 1 tsp baking soda
  • 3 Tbsp olive oil
  • 8 garlic cloves
  • minced
  • ¾ cup (80g) Parmesan
  • finely grated, plus 1 to 2 optional Parmesan rinds
  • ¼ tsp baking soda
  • 2 Fresno chiles
  • small, thinly sliced into rounds, seeds and all
  • 2 Tbsp apple cider vinegar
  • 250g (9 oz) baby spinach
  • ¾ cup (15g) parsley
  • roughly chopped
  • 100g (7 Tbsp) unsalted butter
  • fridge cold and cut into ¾-inch/2cm cubes
  • salt
  • black pepper
