Ingredients
  • 200g (1 cup) good quality salted butter, at room temperature
  • 40g dried porcini mushrooms, or dried shiitake as a substitute
  • 1 ½ cups boiling water
  • 200g (1.5 medium) onions, chopped
  • 6 garlic cloves, chopped
  • 125ml (½ cup) olive oil, added in two batches
  • 2 good pinches of flaky sea salt
  • 20ml (1.5 Tbsp) white wine vinegar
  • 10g (½ bunch) chives, finely chopped
  • Baguette or crusty bread, to serve
