Tourtière (Québécois Meat Pie)

Ingredients
  • 2 1⁄2 cups flour
  • 1 tsp. dry mustard powder
  • 1⁄2 tsp. lemon zest
  • 1⁄2 tsp. kosher salt, plus more to taste
  • 16 tbsp. unsalted butter, cubed and chilled
  • Juice of 1 lemon
  • 1 1⁄2 cups finely chopped russet potatoes
  • 2 tbsp. canola oil
  • 1 1⁄2 lb. ground pork
  • 6 cloves garlic, minced
  • 2 small yellow onions, finely chopped
  • 1 medium carrot, finely chopped
  • 1⁄2 cup apple cider
  • 1⁄2 tsp. celery seed
  • 1⁄2 tsp. ground cloves
  • 1⁄2 tsp. ground nutmeg
  • 1⁄2 tsp. ground ginger
  • 2 bay leaves
  • Freshly ground black pepper, to taste
  • 1 egg, mixed with 2 tbsp. milk, for egg wash
  • 1⁄2 tsp. ground cinnamon
