Ingredients
  • 4 tbsp Thai Green Curry Paste
  • 2 large garlic cloves , minced
  • 2 tsp fresh ginger , finely grated
  • 2 tbsp avocado oil
  • 1 cup (250ml) chicken broth
  • 400 g/14oz coconut milk
  • 1 to 3 tsp fish sauce (to taste, start with 1)
  • 1 to 3 tsp white sugar (to taste, start with 1)
  • Peel of one lime (only green part)
  • 1lb chicken, cut into bite sized pieces
  • 2 potatoes, cut into pieces
  • Mushrooms, if wanted
  • 1 ½ cups snow peas , small, trimmed
  • 16 Thai basil leaves
  • Juice of ½ lime , to taste
