Stir-Fried Spinach Andhra Style
from Maddhur Jaffrey
Ingredients
  • 500 g/1 lb 2 oz spinach, well washed
  • 2 tablespoons olive or peanut oil
  • ¼ teaspoon whole cumin seeds
  • 3 cloves garlic, peeled, 1 halved
  • lengthways and 2 finely chopped
  • 4 to 5 whole fenugreek seeds
  • 6 to 7 fresh curry leaves, lightly crushed in your hand
  • 1 onion (130 g/4½ oz), peeled and finely chopped
  • 1 teaspoon peeled and very finely grated fresh ginger
  • generous pinch of ground turmeric
  • ½ teaspoon ground coriander
  • ¼ to 1 teaspoon nice red chilli powder
  • ½ teaspoon salt
