Coconut-Braised Chicken with Chickpeas & Lime
Ingredients
  • 1.8 kg bone in, skin on chicken (mix of breasts and legs)
  • kosher salt
  • black pepper
  • 2 tbsp canola oil
  • 4 large garlic cloves
  • 1 red onion (thinly sliced)
  • 2 tbsp gochujang chilli paste (or red chilli paste)
  • 2 tbsp grated ginger
  • 1 tsp ground turmeric
  • 1 tbsp cumin seeds
  • 1 ½ tsp chilli flakes
  • 2 x 400 ml cans coconut milk (full fat)
  • 750 ml chicken stock
  • 2 x 400g (net weight) tins chickpeas (drained & rinsed)
  • 2 tsp fish sauce
