Creamy Caesar Dressing

Ingredients
  • ⅔ cup avocado or light olive oil
  • 1 egg
  • 2 Tbsp lemon juice
  • 2 wild anchovy filets
  • 2 cloves of garlic, minced
  • ½ tsp Dijon mustard
  • ½ tsp salt
  • ½ tsp cracked black pepper
  • 2 Tbsp coconut milk
Steps
  1. Instructions: Add minced garlic and anchovy fillets to the food processor and pulverize. Add all other ingredients besides oil and coconut milk and then pulse to combine. Slowly drizzle oil in top holes. Add coconut milk in last, pulse to combine.
