Great Protein "Pizza" Snack
Ingredients
  • Last week I discovered I really like fried mozzarella. Today, I added sliced jalapeños and it’s amazing. I scoop about ⅓ to ½ cup shredded cheese into nonstick pan over medium low heat. Then topped with sliced jalapeños (anything you like would be great. The mozzarella is pretty salty already so I wouldn’t do additional salty toppings. About 2 min or so, use a spatula to loosen it around all edges before carefully flipping it over. It’s very gooey but can be done. The first side needs to be golden brown before flipping. Careful not to let it burn. Then cook another 2 min, lowering heat a little. Then turn off heat and let it cool in pan until cool enough to handle. I slid it onto plate and then used a fork to help me roll it.
