Crispy Rice Paper Rolls from The Little Green Kitchen

You can use rice paper for more than just fresh summer rolls. We like to add a filling to them, brush them with oil and yoghurt and bake them into easy crispy rolls. The kids love these little parcels and they pack well in a lunchbox. Here we keep the filling super-simple but anything goes, so let your imagination run wild!

Ingredients
- subheading: Filling:
- 2 carrots (250 g/9 oz), tops removed and peeled
- 75 g (2½ oz /½ cup) frozen peas
- 75 g (2½ oz/½ cup) crumbled feta
- 1 tsp lemon juice
- sea salt and freshly ground black pepper
- subheading: Egg wash:
- 1 egg
- 1 tbsp plain unsweetened yoghurt (optional)
- 1 tbsp olive oil
- ¼ tsp sea salt
- subheading: To assemble:
- 5 rice paper sheets
- nigella seeds
- subheading: Other lunchbox items:
- lacto-fermented cucumber
- banana halves
- cherry tomatoes on a stick
- dark chocolate-covered rice cakes
Steps
- Preheat the oven to 200°C (400°F/gas 6), grease a baking tray (pan), or line it with baking parchment.
- subheading: To make the filling:
- Coarsely grate the carrots and transfer them to a large bowl along with the rest of the ingredients. Season to taste with salt and pepper, mix and set aside.
- subheading: To prepare the egg wash:
- Crack the egg into a small bowl, add the rest of the egg wash ingredients, whisk together and set aside.
- subheading: To assemble:
- Fill a flat bowl with lukewarm water, dip a rice paper sheet in the water and, once soft and pliable, transfer to a clean work surface. Place a couple of tablespoons of the filling in the centre of the bottom half of the sheet. Gently pull the edge of the sheet away from the work surface and roll it over the filling, tucking it in firmly. Cut in half, fold in the sides and roll up tightly. Repeat with the rest of the sheets and filling. Transfer to the tray, brush with the egg wash and sprinkle with nigella seeds.
- Bake for 20 minutes or until golden and crispy.
- Once cooked, remove from the oven and set aside to cool completely. Wrap in parchment paper or reusable food wraps, and pack in a lunchbox with other items.
Notes
- A helping hand:
- A child’s task can be to whisk together the wash, brush the folded rice paper rolls and help with rolling them up.
