Chinese Cabbage Stir-Fry, Two Ways (手撕包菜)
Ingredients

  • 3 tablespoon cooking oil
  • 3 teaspoon Sichuan peppercorn
  • 9 cloves garlic, sliced
  • 9 slices ginger
  • 18 dried chillies - or fresh chillies
  • 750 g cabbage, hand-torn into small pieces - see note 1
  • 1.5 teaspoon dark soy sauce
  • 1.5 teaspoon light soy sauce
  • 0.75 teaspoon black rice vinegar
  • 3 pinch salt
  • 3 pinch sugar
  • subheading: For the sausage version:
  • 3 tablespoon cooking oil
  • 6 Chinese sausages (Lap cheong), sliced - see note 2
  • 3 teaspoon ginger, julienned
  • 750 g cabbage, hand-torn into small pieces - see note 1
  • 3 stalk scallions, finely chopped
  • 6 teaspoon oyster sauce
  • 1.5 teaspoon light soy sauce
