Easy Chicken Lo Mein
Ingredients
  • 8 oz skinless, boneless chicken breast, diced
  • 8 oz lo mein egg noodles
  • 2 tsp olive oil
  • 2 cups broccoli slaw (I used Trader Joe’s)
  • 1 cup snap peas
  • 2 cups baby spinach
  • ¼ cup reduced sodium soy sauce
  • 2 tsp sesame oil
  • 4 cloves garlic, minced
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • ½ tsp ground ginger
  • 1 tbsp Sriracha sauce (more or less to taste)
