Gochujang Pork Chops with Scallion Relish and Sesame Bok Choy Salad

  • 1 tablespoon gluten-free soy sauce or coconut aminos
  • 1 clove garlic minced

  • 1 pound boneless pork chops 2 8-ounce chops

  • 4 green onions root and tough green ends removed, chopped fine
  • 1 tablespoon rice vinegar
  • 2 tablespoons cilantro minced, optional
  • 1 small drop stevia glycerite or 2 teaspoons coconut aminos
  • salt and pepper to taste
  • subheading: Salad:
  • ½ pound baby bok choy rinsed and sliced thin, both the leafy greens and tender stalks, about 4 heads, 4 cups
  • 2 to 3 tablespoons gluten-free soy sauce or coconut aminos
  • 2 to 3 drops stevia glycerite omit if using coconut aminos
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame oil
  • ½ avocado diced, optional
  • 2 green onions sliced, whites added to the scallion relish
