Deliciously Easy Wheat Berry Salad with Pomegranate
If you like grain bowls or grain salads, you will love this recipe for a wheat berry salad. Wheat berries are a nice way to mix up the grains you eat, especially if your regular standbys are rice or quinoa. Wheat berries are mild tasting and have a nice chewy texture to them.

They do take quite a while to cook (soaking them ahead of time shortens the cooking time), but that gives you plenty of time to make the dressing, chop herbs, and get all those seeds out of the pomegranate.
Ingredients
  • Water 2 to 3 cups
  • Oranges 1
  • (juiced and zested)
  • Limes 1
  • (juiced)
  • Olive Oil 1⁄2 cup
  • Honey 2 tablespoons
  • Sea Salt to taste
  • Black Pepper to taste
  • Pomegranates 1 large
  • (seeded)
  • Fresh Herbs
  • (Parsley, mint, or other herb, chopped)
