Edamame Salad with Peanut Dressing
Ingredients

  • 3 cups finely shredded red cabbage about ⅓ of a head of cabbage; see note #1
  • 2 cups thawed shelled edamame (mukimame) see note #2
  • 1 and ½ cups shredded carrots
  • 1 large cucumber seeded and sliced into half moons
  • ½ cup sliced green onions
  • ¼ cup roasted salted peanuts
  • 2 tablespoons sesame seeds
  • 4 sheets roasted seaweed thinly sliced
  • subheading: For the peanut dressing:
  • ¼ cup creamy peanut butter
  • ¼ cup rice vinegar
  • 1 tablespoon plus 1 teaspoon soy sauce
  • 1 and ½ teaspoons toasted sesame oil
  • ¼ teaspoon ground ginger
  • ⅛ teaspoon granulated sugar
  • 1 tablespoon chili garlic sauce optional
  • 1 to 3 tablespoons water
