Cristin's Pork Green Chili
Ingredients
  • 2 lbs stew pork
  • 1 cup flour
  • ½ tbsp salt
  • ¼ tbsp pepper
  • 2 tbsp canola oil
  • 1.5 onions
  • 5 to 6 garlic cloves
  • 1 big box of broth
  • 1 14oz can diced tomatoes
  • 4 4oz mild green chili
  • 1 tsp cumin
  • 1 tsp red Cayenne
  • ½ tbsp salt
  • ¼ tbsp pepper
  • Optional garnishes: cheese, sour cream, crackers, raw onion
Steps
  1. Combine flour, salt, and pepper in a medium bowl. Add pork and toss with tongs until coated.
  2. Heat oil on medium in large stew pot. Add coated pork in a single layer. After 2 to 3 minutes add onion. After an additional 2 to 3 minutes add garlic. Cook, stirring frequent, until pork is browned.
  3. Add remaining ingredients. Bring to a boil. Reduce to a simmer and cook, sitting frequently, 1 hour.
